
Engagement Chicken

Ingredients
1 pound Chicken -- cut in eighths
1 lemon -- cut in eighths
4 cloves garlic -- sliced
1 tablespoon fresh rosemary -- chopped
1 tablespoon fresh thyme -- chopped
1 tablespoon fresh sage -- chopped
1 tablespoon fresh parsley -- chopped
2 fluid ounces olive oil
8 fluid ounces chicken stock
Salt and pepper -- to taste
Preparation Method
Rub the chicken with olive oil and arrange in baking dish with the lemon wedges.
Combine the herbs with stock and any extra olive oil and pour over chicken, season liberally.
Bake in a 350 degree oven for 45 minutes.
When done, place the chicken on a wire rack to rest for 5 minutes prior to serving.
This lets the juices redistribute so that when the chicken is cut into it will remain moist.
Serve the pan juices as a sauce.
