LAS VEGAS -- Former President Bill Clinton is in town for the national Clean Energy Summit. The event kicked off Monday evening. One of the topics they'll be discussing at this summit is how businesses can earn more by using less -- specifically energy. One local business is already doing its part to conserve energy.Aaron Schropp, owner of Canvas Cafe in Las Vegas, learned early on from his grandparents about this concept we call "going green."“Early on in Iowa, we always recycled. It's important for newspapers, beer bottles or cans. I wanted to do that for Las Vegas, because I didn't really see that,” Schropp said. So, he decided to outfit his gourmet cafe with eco-friendly products.“As a restaurant, we create a great deal of waste. It's our job to lower the impact,” he said.He started with a Japanese designed water heater. He said it saves space, energy and water.Schropp ditched Styrofoam for recycled bio-packs and special wraps. Even his cleaning supplies are made of ecologic chemicals.“I've been told you can drink this, but it cuts grease better than anything else,” Schropp said. When it comes to cooking grease, it gets poured into a bin, where Biodiesel of Las Vegas picks it up and turns it into renewable energy.“We can use that for our cars, public transportation for our own cars, heating and cooling for our businesses,” he said. It's a business model that keeps the customers coming.“It's very hard to run a small business, and I think if they're trying to do everything they can, it shows a positive outcome for the community,” said customer Tricia Candejas.Schropp said he's simply learning from his past to help preserve the future.Sen. Harry Reid is hosting the two-day energy summit.
