- Cream butter and sugar Add eggs zest and puree Add flour and salt, fold in blueberries Transfer to 8 nonstick molds Bake at 300 degrees Fahrenheit for 20 minutes
- 3.75 ounces blueberries 1.5 ounces sugar 1.5 tbl and 1.5 tsp water 1.5 tsp corn starch
- Cook blueberries and sugar with 6 tbl water until soft Make slurry with 6 tsp water and cornstarch, add to blueberries and cook until thickened, puree For leather; spread thin on silipat (nonstick sheets) and bake at 225 degrees Fahrenheit until crispy
- 570 grams sour cream 345 grams sorbet base 80 grams water 62.5 grams sugar 1/2 lemon zest and juice
- 357.5 grams glucose 250 grams corn syrup 305 grams water
- Combine all ingredients and spin in ice cream machine till desired consistency.
- 6 yolks 1/3 cup orange juice 1/4 ea zest of orange 1/3 cup sugar
