Some balsamic vinegars are made from red wine vinegar that has been fortified with concentrated grape juice and caramelized sugar. They can be used in recipes but lack the flavor complexity of true aceto balsamico tradizionale.
Paulette Mitchell, a culinary instructor, television personality, spokesperson, freelance food writer, and the award-winning author of 13 cookbooks, is known internationally for her quick-to-prepare recipes with gourmet flair.
