Tip: Chèvre Cheese

Chèvre and Montrachet are tangy, creamy cheeses made from goat's milk. Domestic goat cheese is a fine substitute for the more expensive, imported brands. Once opened, wrap the cheese tightly in plastic wrap, and store it in the refrigerator for 1 to 2 weeks.

(Do not confuse chèvre and Montrachet with feta cheese or caprino, Italian goat cheese, which is dried, less creamy, and more acidic.)
