Grilled Apples

This is a wonderful fruit topping for ice cream or over a short cake. The best part is, you don’t have to heat up the house to enjoy it!

  • Serves 6
  • Special equipment: Heavy duty foil, grill
  • Ingredients:
  • 3 large apples (any variety), cored, sliced ½ inch thick
  • 1 T vegetable oil
  • 3 T brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 3 short cakes, split (optional)
  • Method:

  • Combine oil, brown sugar and spices in a large zip top plastic bag. Add apples and toss well to coat. Let sit at room temperature for up to 1 hour.
  • Using heavy duty foil, make a double “bag”. Layer two sheets of foil about 2 feet long (usually 18 inches wide). Fold the double layer in half and roll two open sides tightly to close.
  • Pour apple mixture into foil bag and seal the third side (the fourth side will be the fold).
  • Grill over medium heat for 20-30 minutes. Flipping the bag over once during cooking.
  • Remove from grill and let rest for 5-10 minutes before opening bag.
  • Pour apples and sauce into a serving bowl and enjoy over short cake or ice cream.
  • Note: Grill temperatures vary so cooking time will vary as well. To check doneness, open on end of foil bag carefully and stick a fork in one apple. If the apple is tender, the fruit is done. If not, reseal and continue to grill.
